Hello all you beautiful people of the internet. How are we doing?
Along with sharing some of the things I’ve been
scarfing down eating lately, I wanted to talk about balancing a healthy lifestyle while still, you know… living your life.
I don’t think healthy has one definition. I also think it means something different for everyone. My healthy isn’t your healthy. And yours may not be mine. Being healthy isn’t all about the food you eat or the calories you burn. It has so much to do with your mindset and your thoughts.
If you eat healthy 80 percent of your day and decide to savor some ice cream after dinner and really enjoy it, then I think you’ve found your healthy. Healthy isn’t beating yourself up about all the not-so healthy things you eat but congratulating yourself for all of the good things that you do. If you have positive thoughts toward your body and your health you will want to feed it good, nutritious foods.
Healthy is about having the freedom to try new things, to indulge in dessert, and to live a little. A healthy lifestyle shouldn’t keep you from enjoying a dinner out with friends or a late night ice cream run. If you find that it is holding you back from enjoying life then you might need to re-evaluate your healthy.
A healthy lifestyle shouldn’t be a cause for stress or anxiety, but quite the opposite. I am in no way the perfect example (is anyone really?) and I am still working on honing in on my healthy, which I’m excited to be able to tweak and adapt as my life changes.
Now on to my daily attempts at healthy.
Yesterday I went to an early morning spin class and came home ready to eat my arm off. So I made this delicious smoothie bowl. Made with 1/2 a frozen banana, a frozen fig, a few frozen strawbs, 1/2 scoop vega protein powder, kale, spinach and enough almond milk to get it moving. I topped it with sliced strawberries, blueberries homemade peanut butter granola, cacao nibs and some coconut flakes. Yum city.
On days when I haven’t been feeling smoothies I’ve been making various different types of oatmeal. This one was inspired by
the love of my life carrot cake. I cooked 1/2 C water, 1/2 C almond milk and 1/2 C oats on the stove, then added a touch of vanilla extract, half of a banana, half a carrot (finely shredded) and some cinnamon in towards the end.
For lunch I’ve been on a salad kick where I just throw in whatever leftovers are in the fridge, hoping it results in something edible. Today I had one with sweet potatoes, leftover salmon, zoodles (or zucchini noodles for you non-foodie folk) tomatoes and a few walnuts on top.
But someday’s lunch looks like this^^. Beautiful acai bowls. I need more of these in my life.
Or cute lunch dates with one of my besties (who just got into grad school) #proudbestfriend at Big Sky Cafe.
This particular afternoon I had off work so I found myself sipping green tea and reading a new book. The Cuckoo’s Calling by Robert Galbraith aka J.K. Rowling…random I know…it’s pretty good so far (well, 18 pages in).
This day I sipped on some iced coffee while reading through a new cookbook. I’ll admit I’m Giada obsessed. I just bought 2 of her cookbooks and every recipe looks to die for.
Also apples with cinnamon and almond butter have been my favorite afternoon snack. Cora thinks so too.
I’m pretty boring when it comes to dinner, most of the time its some kind of roasted vegetable with grilled chicken or an egg or two. Tonight I roasted kale, onion and sweet potatoes with a little olive oil at 425 degrees for 20 min.
After dinner I had a square of my Peanut Butter Chickpea Blondies. I think I could eat these for every meal and they would never get old.
