Anywhooo I thought I would participate in WIAW this week, I’ve been missing out on these posts, honestly they’re not my absolute favorite to write (I love writing life and wellbeing posts) mostly because what I eat is pretty much the same ‘ole boring stuff day after day…but I do like to read them so I figured I should contribute. Enjoy!
8am Breakfast after a run was a batch of banana protein pancakes topped with almond butter, blueberries, raspberries and honey. Also, coffee with almond milk and cinnamon.
12 PM: Lunch was my attempt at a Backyard Bowl made with 1/2 of a frozen banana, 1/2 C frozen mango, some spinach, kale, Vega protein powder, topped with hemp granola, almonds, more banana slices and blueberries! Normally I try to eat a little more protein (and a little less fruit) but I was craving something sweet and refreshing.
I also whipped up some protein balls made with a few dates, 1/2 C almonds, 1/2 C unsweetened coconut, cacao nibs and pumpkin pie spice. I usually make these at the beginning of the week to snack on throughout the week, they’re a nice little energy boost and a great way to satisfy your sweet tooth!
7 PM Glorious, rosemary pesto garlic salmon, with some un-pictured roasted veggies (cauliflower and brussels sprouts).
8:30 PM I had a couple of pieces of dark chocolate while sipping on some tea and studying for my group fitness instructor exam. (I’m getting certified through AFAA, eeek! So excited for this, I’ll be sure to write-up a post on my experience after it’s all over!)
I caught the tail end of a really beautiful sunset on my way home tonight, this picture really doesn’t do it justice. Fun fact about me: one of my favorite things is sitting and watching the sunset with people, it can seriously turn any bad day around.
