An easy to make, protein packed, sugar-free pancake recipe to start your week off right.
What a marvelous Monday it is when you can fuel yourself with a batch of these babes.
Continuing with my recent theme of creating a healthy lifestyle for yourself, loving the body that you have been given with proper exercise, clean eating and a positive mind, I thought I would share one of my favorite “health-ified” recipes. While I think for your physical health you should try to eat as clean as possible, I also think that you need to allow some wiggle room in your diet for your mental health as well. In other words: treat-yo-self. If you deprive your body of certain foods that you love, you will be more prone to fall back into your old ways and give up on your healthy lifestyle. One way to do indulge in a healthy way is to make cleaner versions of your favorite treats…ergo my pancake quest:
Its taken me a while to perfect my protein pancake recipe. To be honest its been quite a long arduous journey filled with many scrambled-egg-looking-faliure-pancakes (which taste good but don’t warrant an entire blog post). ALAS I have fine-toned my recipe and am ready to share with the world!
- ½ Banana
- 1 Egg + 2 Egg Whites
- ½ Scoop Vega Vanilla Protein Powder
- 1 Tbs Ground Flax Seeds
- 1 Tbs Coconut Flour
- 1 Tsp Cinnamon
- 1 Tsp Vanilla
- 1 Tsp Baking Powder
- 3 Tbs Almond Milk
- In a mixing bowl whisk all ingredients together.
- Heat a pan or skillet on medium heat.
- Coat pan with Coconut or Olive Oil Spray
- Scoop about ¼ Cup of mixture onto pan
- Flip pancake when it has fully bubbled.
- Makes about 4 pancakes
You can top these with whatever toppings you desire, I put a spoon full of almond butter, a few banana slices, hemp seeds, cinnamon and a drizzle of honey on top!
